  • 1 cup ripe mango pulp (fresh or frozen, thawed)
  • 1/4 cup powdered sugar (adjust to taste)
  • 1/4 teaspoon cardamom powder
  • 1/8 teaspoon saffron strands, soaked in 1 tablespoon Ksheer milk (optional)
  • 1/4 cup chopped nuts (almonds, pistachios, cashews)
  • Fresh mint leaves, for garnish (optional)

Instructions:

  • Strain Dahi: Place a cheesecloth or muslin cloth in a fine-mesh strainer set over a bowl. Pour the dahi into the cloth and tie the ends to hang. Refrigerate for at least 3 hours, or overnight, to remove excess whey and thicken the dahi.
  • Prepare Mango Pulp: If using fresh mangoes, peel and chop them finely. Blend the chopped mangoes to a smooth puree. You can also use store-bought mango pulp, ensuring its smooth texture.
  • Mix & Flavor: In a mixing bowl, combine the strained dahi, mango pulp, powdered sugar, cardamom powder, and saffron milk (if using). Whisk until smooth and evenly blended.
  • Chill & Serve: Divide the mango shrikhand among serving bowls or glasses. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
  • Garnish & Enjoy: Top with chopped nuts and fresh mint leaves (optional). Serve chilled and savor the creamy mango delight!
